Easily soluble in water. Odorless and tasteless. Its solution can be sterilized by autoclaving at 100-115°C for 30-45 minutes. Dextran is found in the mucus secreted during the growth of certain microorganisms. It is primarily composed of D-glucopyranose linked by α,1→6 bonds, with branching points at 1→2, 1→3, and 1→4 linkages. Its structure varies depending on the type of microorganism and growth conditions.
